I love Meatless Mondays. Or Tuesdays through Sundays for that matter. They’re so easy! Nothing to have to remember to pull out of the freezer to thaw. No grill or oven to preheat. No braising, broiling, roasting or grilling. And no worrying whether it will be tough – or too pink inside. Oh, and of course, there’s all of that important environmental stuff, and the fact that people who eat more plant-based meals tend to be healthier overall. But let’s just focus on the fact that it’s Monday, and we’re coming off the weekend, and we’re all busy, and we need easy for dinner tonight. Plus, sometimes on a Sunday night, I just really don’t like to write long, involved recipes and blog posts.

It’s time for another Recipe ReDux post, and this month’s theme is 7 Ingredients or Less. That’s my kind of a recipe, and it ranks right up there with my other favorite category -the One Pan Recipe. Even though I love to cook, if I see a long ingredient list in a recipe, I hate to admit it, but I usually can’t be bothered. Inevitably, I’m out of at least one of the ingredients, or I’ll make the entire thing, and then realize I left one (or more) of those ingredients out because I just couldn’t keep track. In short, no-brainer recipes are always best.
This delicious pasta salad is full of the first vegetables of the season – a perfect way to savor the flavor of eating right, during National Nutrition Month, and all year long.
Ask anyone why they eat the things they do, and I’ll bet you the number one answer will be “because it tastes good.” Maybe you’ll get an occasional “because it’s good for me”, but more than likely it’s all about taste. And it should be! Good food tastes good.

Canned beans are probably the number one food I recommend everyone keep in their pantry. I tend to buy them almost every time I’m shopping, and as a result, I have about six thousand cans in my pantry. You never know when you’re going to have to make baked beans for the entire town. I’ve never actually read a statistic about this, but I’m gonna guesstimate that about 75% of us eat pretty much the same thing for breakfast most days of the week. As in I eat overnight oats Monday through Friday. Sure, I vary the fruit, and nuts, and overall flavors, but for me, it’s usually oats, milk, fruit, nuts, yogurt. Maybe if I’m feeling really crazy I’ll sprinkle some hemp seeds over the entire thing. If I ever go out to breakfast though – the last thing I’d order is overnight oats.
