One Skillet Pappardelle Pasta Primavera

Ease into the week with this ridiculously fast and easy One Skillet Pappardelle Pasta Primavera – perfect for a Meatless Monday dinner.

I love Meatless Mondays.  Or Tuesdays through Sundays for that matter.  They’re so easy!  Nothing to have to remember to pull out of the freezer to thaw.  No grill or oven to preheat.  No braising, broiling, roasting or grilling.  And no worrying whether it will be tough – or too pink inside.  Oh, and of course, there’s all of that important environmental stuff, and the fact that people who eat more plant-based meals tend to be healthier overall.  But let’s just focus on the fact that it’s Monday, and we’re coming off the weekend, and we’re all busy, and we need easy for dinner tonight.  Plus, sometimes on a Sunday night, I just really don’t like to write long, involved recipes and blog posts.

25 Ways to Celebrate Spring Vegetables

It’s time to ditch the white comfort food, and welcome spring with lots of colorful, fresh spring vegetables.

Hey there!  How happy are you that the end of March is in sight, and spring is just around the corner?  For real – and you know I mean spring weather, not the actual date on the calendar.  As soon as the days are longer, and the air has that “hello – it’s spring” smell to it, and shadows from the sun start screaming “it’s here!”, don’t you just want to say buh- bye to carbs and comfort food, and hello to those pretty, colorful spring veggies?  I sure do! Grilled Cheddar, Brie and Apple Sandwiches

Grilled cheese is quick dinner and comfort food all in one.  Kick it up a notch with this grown-up version of your childhood favorite

It’s time for another Recipe ReDux post, and this month’s theme is 7 Ingredients or Less.  That’s my kind of a recipe, and it ranks right up there with my other favorite category -the One Pan Recipe.  Even though I love to cook, if I see a long ingredient list in a recipe, I hate to admit it, but I usually can’t be bothered.  Inevitably, I’m out of at least one of the ingredients, or I’ll make the entire thing, and then realize I left one (or more) of those ingredients out because I just couldn’t keep track.  In short, no-brainer recipes are always best.

Farmer’s Market Pasta Salad with Lemon-Herb Buttermilk Dressing

This delicious pasta salad is full of the first vegetables of the season – a perfect way to savor the flavor of eating right, during National Nutrition Month, and all year long.

Ask anyone why they eat the things they do, and I’ll bet you the number one answer will be “because it tastes good.”  Maybe you’ll get an occasional “because it’s good for me”, but more than likely it’s all about taste.  And it should be!  Good food tastes good.

Crock-pot Boston Baked Beans

Leave the oven off and make these Boston Baked Beans in a crock-pot. You’ll never eat canned baked beans again!

Canned beans are probably the number one food I recommend everyone keep in their pantry.  I tend to buy them almost every time I’m shopping, and as a result, I have about six thousand cans in my pantry.  You never know when you’re going to have to make baked beans for the entire town.   Continue Reading..

Tuna & Freekeh Tabouli Salad

Solid white albacore tuna is a perfect protein addition to this whole grain tabouli salad. Pack some of this heart-healthy Mediterranean deliciousness in a mason jar for a healthy lunch tomorrow!

I’ve never been a big fan of deli sandwiches for lunch – you? There are only so many variations of a turkey or chicken breast sandwich that I can think of. And the really fancy ones take a bit more time to make than I can spare in the morning or middle of the day. Plus, the latest news about processed meats has given me yet another reason to work on adding more plant-based meals and unprocessed proteins to my menu. Continue Reading..

Savory French Toast with Caramelized Vegetables

Break out of your breakfast boredom with this savory twist on French Toast.

I’ve never actually read a statistic about this, but I’m gonna guesstimate that about 75% of us eat pretty much the same thing for breakfast most days of the week.  As in I eat overnight oats Monday through Friday. Sure, I vary the fruit, and nuts, and overall flavors, but for me, it’s usually oats, milk, fruit, nuts, yogurt.  Maybe if I’m feeling really crazy I’ll sprinkle some hemp seeds over the entire thing.  If I ever go out to breakfast though – the last thing I’d order is overnight oats.

So how fun that this month’s Recipe ReDux challenge is to break out of our breakfast boredom with something totally new and creative.  Totally time for me to snap out of my breakfast rut. Continue Reading..

Hey there El Nino.  Go.  Home.  Please!  It’s cold, and raw, and nasty in my part of the world right now, and it’s all thanks to a little guy named El Nino.  I used to love it when he came ’round to visit me in New England, because it meant wet and rainy, and I would take that any day over snow and sub-zero temps.
