Yes, I am aware that I just did a Cinco de Mayo recipe roundup last week, but I just realized that May 5 falls on a Meatless Monday this year, sooooo. Here’s another one for you! I might have mentioned a few thousand times that I am a huge, major fan of Mexican food. I love the spiciness, the creative flavors, the avocados, the limes… Mostly I love Mexican though, because it’s such a cinch to pull together last minute, and it’s so versatile. As long as you have a package of tortillas in the pantry, a can of black beans (and that cilantro that never stays fresh for more than a few days) and a little imagination, you’re good to go!
