I’m totally dating myself here, but a million years ago, there was a television ad for Alka-Seltzer called “I can’t believe I ate the whole thing”.  That’s kind of how I’m feeling after the holidays.  I try to keep it as healthy as possible for as long as possible, but by about the time December 20 rolls around, I start sneaking the cookies and candy, and then the company arrives, and there are the dinners out.  And my kids love to make their big bacon, eggs, and hash brown breakfasts – with a big side of fruit, of course. And then there are the cheese boards, with things I rarely eat – like peppered salami. And the wine. Lots of wine.  So, by early January,  when the last of them has been dropped at the airport, I’m ready to jump back on the clean eating bandwagon. Continue Reading..

Who doesn’t love a baked French toast casserole for a leisurely Sunday brunch?  It’s a great option to feed a group because you make it the night before, let it sit in the fridge, and then when it’s time, you just pop it into the oven.  Unfortunately, most recipes tend to be pretty high on the carb scale, because in addition to the bread and syrup, there’s usually a fair amount of sweetener involved in the egg mixture.   Continue Reading..

Do you ever think about how differently you eat depending on the season? Sure, it’s partly because of seasonal produce, but the temperature outside, and the family schedule also has a lot to do with what goes on our plates at different times of the year. That’s one of the biggest reasons I love pasta – it adapts so easily to so many different types of recipes. Whether you toss it with fresh vegetables and eat it cold in the summer, or stir it into a big pot of soup for busy school nights, or treat yourself to a creamy casserole dish of comfort food as the sun starts to set earlier – it’s all good! At less than 200 calories, lots of healthy complex carbs, and with 7 grams of protein per serving, pasta is a great foundation for a satisfying and healthy meal, and the perfect partner to pair with so many healthy ingredients. Cinnamon Raisin Butter

Is there a person on this earth who doesn’t crave a snack around 3:00 each day? It’s like clockwork, whether you’re young or old — there’s a teeny (or sometimes screaming loud) voice inside your head that says “feed me or else!” right smack in the middle of the afternoon. Anyone with kids knows all about the complete physical and mental breakdown that occurs when one is unprepared for the Hangry Horrors. But offer them something delicious, filling, and healthy, and that afternoon snack can easily turn evil little monsters into happy, sweet and energetic angels.


 

Well, guess what? Even though most adults can do a good job of controlling our hangry tantrums (it doesn’t look so good after all, to have a breakdown in the middle of a business meeting) even grownups still need a healthy snack in the mid-afternoon. Imagine how much happier the world and especially our workplace would be with snack and nap at 3:00 each day. Just sayin…   Continue Reading..
