25 Meatless Meals to Start the New Year

One of the things I’m encouraging everyone to do this year is to eat less meat and more food that comes from the soil, aka -plants.  I’ve never been a huge meat eater myself, but I’ve always prepared it as part of dinner for the rest of the family.

Lately however, I’ve been making more of an effort to create and prepare recipes that are meatless, and I’ve been pleasantly surprised that no one in my house has complained – or even mentioned it.  In fact, the two men in the house, who could live on steak and potatoes if left to their own devices, seem to have a few new favorite vegetarian meals.  I’m not sure if they know they’re vegetarian or not, but I’m keeping my mouth shut 🙂 Continue Reading..
