Roasting radishes brings out a sweetness you never knew existed! Pair them with white beans, fresh parsley, feta and a lemon vinaigrette for a healthy and delicious side dish.

One of the worst things, (for me) about writing a food blog is that I can almost never eat the same meal twice.  Really.  No matter how much I loved it – there’s always a new blog post to write, which means a new recipe to create.  On the other hand, one of the best things about writing a food blog is that it pushes me to always try something new.  New cuisines; new cooking methods; new ingredients.  So I had to smile when I read the theme for this month’s Recipe ReDux -“Show us how you’re cooking with something new (to you!) in 2016″. Warm Barley Mushroom Salad {Meatless Monday}

Well hello and a very belated Happy New Year dear reader!  I’ve been away from the blog for a few weeks with the holidays, and lots and lots of company from Thanksgiving all the way through the beginning of January, and as much as I enjoyed it, it’s kind of nice to be back to my old schedule.

Did you make any New Year’s resolutions?  I have a few, and I’ll tell you about most in the next few weeks (I have to be accountable to someone right?), but one of my food/diet/health resolutions is to eat more salads.  It’s not that I don’t like them – I really do!  But it’s the thought of making them that I hate 🙁  So I’m working on making them big enough to count as a meal, or eat for several days, so it doesn’t feel like such a chore.   Continue Reading..

Summer Stretcher Grilled Vegetable Recipes

Don’t turn off the grill yet! One of the hardest things about the end of summer and the start of fall is turning off my grill. OK that’s so not true. There are lots of hard things about leaving summer, but we’re not going to whine today. We’re going to pretend that we have lots more summer to enjoy by grilling up these tasty treats. I don’t know about you, but I try to use my grill as long as possible – which usually means it’s pitch black outside and I’m wearing a winter coat 🙂 .  We have a bit of time before that happens, so I’m sharing some of my favorite grilled vegetarian recipes to stretch out the summer juuuust a little bit longer.
