To say that I’ve been in no mood to cook lately would be an understatement.  We’ve had record breaking temps for the past 4 days, and in Arizona, that means high one-teens to 120 degrees in some towns.  I’m not complaining – I’ll still take it over shoveling any day, but when it gets this hot, there’s no chance at all that I’m turning on the stove or oven.  Tonight was a perfect night to invite some friends over for a float in the pool, a few bottles of very cold wine, and a totally delicious summer farmer’s market pizza – recipe courtesy of a fellow RD and blogging friend, EA Stewart. Ever since I moved to Arizona almost 2 years ago, I’ve been totally immersed in the deliciousness of Mexican food.  I’m sure people in Texas and California, and probably New Mexico would argue, but we have the most Ah-Mazing Mexican food here.  And margaritas – holy wow!  My new favorite is a mango-jalapeno margarita at a place down the street.

I’ve been so entranced by the Mexican food, that I totally forgot about my other favorites, and recently I realized I’ve been missing really good Thai food.  I haven’t seen ANY Thai restaurants in my travels.  Zip.  None.  Nada.  So a few weeks ago I went on a hunt.  I happily found a pretty decent Thai restaurant, but it’s a good 30-minute drive. One Skillet Pappardelle Pasta Primavera

Ease into the week with this ridiculously fast and easy One Skillet Pappardelle Pasta Primavera – perfect for a Meatless Monday dinner.

I love Meatless Mondays.  Or Tuesdays through Sundays for that matter.  They’re so easy!  Nothing to have to remember to pull out of the freezer to thaw.  No grill or oven to preheat.  No braising, broiling, roasting or grilling.  And no worrying whether it will be tough – or too pink inside.  Oh, and of course, there’s all of that important environmental stuff, and the fact that people who eat more plant-based meals tend to be healthier overall.  But let’s just focus on the fact that it’s Monday, and we’re coming off the weekend, and we’re all busy, and we need easy for dinner tonight.  Plus, sometimes on a Sunday night, I just really don’t like to write long, involved recipes and blog posts.

Farmer’s Market Pasta Salad with Lemon-Herb Buttermilk Dressing

This delicious pasta salad is full of the first vegetables of the season – a perfect way to savor the flavor of eating right, during National Nutrition Month, and all year long.

Ask anyone why they eat the things they do, and I’ll bet you the number one answer will be “because it tastes good.”  Maybe you’ll get an occasional “because it’s good for me”, but more than likely it’s all about taste.  And it should be!  Good food tastes good.

Heirloom Tomato, Avocado and Grilled Halloumi Caprese Salad

Is it OK to call this a Caprese salad?  I’m pretty sure (or at least Wikipedia says) a true Caprese salad, or Insalata Caprese, as they call it on the island of Capri, features slices of ripe of tomatoes, layered with fresh mozzarella and basil.  Mine does not, but that’s no reason to get nitpicky about the name.  I’m still celebrating those gorgeous end of summer ripe tomatoes – heirloom in this case, but instead of mozzarella, I’m using sliced grilled Haloumi cheese.  And instead of fresh basil, I’m going with slices of avocado.  Drizzle a bit of balsamic reduction over the whole thing, and WHAT’S NOT TO LOVE?
