I really, truly had every intention of running this post on Saturday, which was Food Day 2015. But, I got sidetracked, so we’re celebrating Food Day just a few days late around here. This year’s Food Day theme is Toward a Greener Diet, and eating just one meal each week is an important step toward a Greener Diet. As good as it might taste, meat is a major drain on our environment, and skipping the meat occasionally, or all of the time – whichever is your preference, not only has health benefits, but it also has tremendous benefits for the environment.
