California Power Salad

Ingredients

Dressing

  • ½ medium avocado
  • ½ small sweet onion sliced into thirds
  • 2 tablespoons lime juice
  • ¼ cup fresh orange juice
  • ¼ cup fresh grapefruit juice
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon maple syrup
  • 2-3 tablespoons cilantro leaves
  • 3 large basil leaves
  • 2-3 tablespoons parsley leaves
  • kosher salt
  • pepper

Salad

  • 4 cups baby greens loosely packed
  • 1 ½ cups cooked quinoa
  • 12 strawberries hulled and quartered
  • 1 ½ cups watermelon cut into thin slices
  • ¼ cup toasted pecans
  • 3 tablespoons sunflower seeds
  • ½ avocado cut into cubes

Instructions

Dressing

  • Add ½ avocado, onion, lime juice, orange juice, grapefruit juice, vinegar, olive oil, maple syrup, and herbs to the bowl of a food processor fitted with the chopping blade. Process until smooth, and season with salt and pepper to taste. If thinner dressing is desired, thin with a bit of cold water.
  • Transfer the dressing to a small bowl and set it aside.

Salad

  • For the salad, toss the baby greens, quinoa, strawberries, watermelon, pecans, and sunflower seeds in a large mixing bowl.
  • Add desired amount of dressing and toss to coat.
  • Add the remaining ½ avocado chunks to the dressed salad.
  • Serve immediately.
