Carrot Cake Smoothie Bowl

Ingredients

  • ½ cup old fashioned oats
  • 1 large carrot peeled and shredded
  • 1 cup chopped pineapple
  • 2 tablespoons unsweetened shredded coconut
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon Truvia Natural Sweetener or more to taste
  • 1 scoop unflavored protein powder
  • 1 cup unsweetened almond milk or any other low fat/nonfat milk

Toppings:

  • ¼ cup raisins
  • 2 tablespoons shredded coconut
  • ¼ cup chopped pecans or walnuts
  • additional shredded carrot or chopped pineapple optional

Instructions

  • Combine the oats, carrot, pineapple, 2 tablespoons coconut, cinnamon, nutmeg, Truvia sweetener, protein powder and milk in a blender.
  • Blend well until the mixture is smooth.
  • Pour into 2 bowls, and add raisins, additional coconut and nuts.

Notes

The smoothie mixture can be made ahead of time, and stored in a covered container in the refrigerator. Add toppings just before eating.
