Carrot Cake Smoothie Bowl

Ingredients
½
cup
old fashioned oats
1
large carrot
peeled and shredded
1
cup
chopped pineapple
2
tablespoons
unsweetened shredded coconut
1
teaspoon
cinnamon
¼
teaspoon
nutmeg
½
teaspoon
Truvia Natural Sweetener
or more to taste

scoop unflavored protein powder
1
cup
unsweetened almond milk
or any other low fat/nonfat milk
Toppings:
¼
cup
raisins
2
tablespoons
shredded coconut
¼
cup
chopped pecans or walnuts
additional shredded carrot or chopped pineapple
optional
Instructions
Combine the oats, carrot, pineapple, 2 tablespoons coconut, cinnamon, nutmeg, Truvia sweetener, protein powder and milk in a blender.
Blend well until the mixture is smooth.
Pour into 2 bowls, and add raisins, additional coconut and nuts.
Notes
The smoothie mixture can be made ahead of time, and stored in a covered container in the refrigerator. Add toppings just before eating.
