Green Goddess Fresh Vegetable Dip

Ingredients

  • 1/4 cup fresh parsley stems removed
  • 3-4 fresh basil leaves
  • 3 tablespoons fresh tarragon leaves
  • 1 shallot
  • 1 tablespoon anchovy paste more or less to taste
  • juice of 1 lemon
  • 1 tablespoon white wine vinegar
  • 3 tablespoons real mayonnaise
  • 1 cup plain Greek yogurt
  • 1 avocado
  • salt and fresh ground pepper

Instructions

  • Place all ingredients up to and including the Greek yogurt in the bowl of a food processor fitted with a chopping blade. Process until smooth and creamy.
  • Cut the avocado into 1/2-inch pieces and stir in. If desired, puree the avocado in so that it's smooth.
  • Season with salt and pepper to taste.
  • Serve with fresh vegetables, or as a sandwich spread.
  • Refrigerate any leftovers in a lidded container and use within 2-3 days.
