Best summer fruit? Watermelon, without a doubt! Here’s why and how to eat lots of this nutritious fruit all summer long.
If summer produce had an academy awards, it would go something like this… Best vegetable (OK I know it’s really a grain) goes to corn on the cob, for it’s starring role as grilled street corn. Best fruit – has to go to watermelon, for it’s starring role in EVERYTHING. I can’t even narrow it down to one or two starring roles or dishes, because they’re all so delicious and positively summery! Whether you eat it straight, over the kitchen sink, with juice dripping down your chin, or you use a ripe, sweet watermelon in a recipe, nothing says summer fruit quite like it.
One of my favorite (foodie) things about late summer in New England is tomatoes. The problem with tomatoes though, as any tomato growing gardener knows, is that when it rains, it pours, and it’s pouring tomatoes right now! Every shape, size, color, and variety. I keep buying more than I need every time I go to the farmers market, or Whole Foods, or just to the regular grocery store because they are just so pretty. And while I’m contemplating what to do with them, I thought I’d share a favorite recipe, and some reasons to love this fruit (yes, tomatoes are technically a fruit, although the Supreme Court declared them a vegetable in 1893).
