How to Make Pretty Refreshing Infused Water

Infused water – full of fresh fruit and herbs is not only pretty to look at, it’s super-refreshing as well!

First, I have absolutely no idea how a full month has gone by all of a sudden!  I’m so sorry for the lack of posts, but I guess I’ve been really busy, friends! Second, how about these gorgeous infused waters?  It’s getting hot out – the forecast here in AZ is calling for our first stretch of 100+ degrees this week.  Every year I try my best to hold off on turning on the AC until Memorial Day… Stay tuned to see if I break down this week.

This Chopped BLT Salad Pizza is even better than the sandwich, and the perfect summer dinner when it’s too hot to cook.

To say that I’ve been in no mood to cook lately would be an understatement.  We’ve had record breaking temps for the past 4 days, and in Arizona, that means high one-teens to 120 degrees in some towns.  I’m not complaining – I’ll still take it over shoveling any day, but when it gets this hot, there’s no chance at all that I’m turning on the stove or oven.  Tonight was a perfect night to invite some friends over for a float in the pool, a few bottles of very cold wine, and a totally delicious summer farmer’s market pizza – recipe courtesy of a fellow RD and blogging friend, EA Stewart. Southwest Stuffed Mini Sweet Peppers

Mini sweet peppers stuffed with a southwest black bean dip make a perfect small-plate dinner or appetizer for summer entertaining.

Savory French Toast with Caramelized Vegetables

Break out of your breakfast boredom with this savory twist on French Toast.

I’ve never actually read a statistic about this, but I’m gonna guesstimate that about 75% of us eat pretty much the same thing for breakfast most days of the week.  As in I eat overnight oats Monday through Friday. Sure, I vary the fruit, and nuts, and overall flavors, but for me, it’s usually oats, milk, fruit, nuts, yogurt.  Maybe if I’m feeling really crazy I’ll sprinkle some hemp seeds over the entire thing.  If I ever go out to breakfast though – the last thing I’d order is overnight oats.

So how fun that this month’s Recipe ReDux challenge is to break out of our breakfast boredom with something totally new and creative.  Totally time for me to snap out of my breakfast rut. Continue Reading..
